Blackberry Chicken Collagen Salad

Dressing Ingredients:
- 4g Blackberries
- 2 tbsps White balsamic vinegar
- 2 tbsps Extra virgin oil
- 2 tbsps Honey
- 2 tbsps MUSTARD

Chicken Ingredients:
- Coconut oil
- 450g Chicken breasts
Salad Ingredients
- 8g Blackberries
- 1 Avocado, sliced
- 450g Lettuce
- 10g red onion, sliced
- 150g WALNUTS
- 10g Chives
- 114g Cherry tomato
- Handful of fresh chopped basil and coriander
Method:
Dressing
For the dressing, mash all the blackberries down until you get a puree and combine with the rest of the ingredients until thoroughly mixed.
Chicken
- Heat a medium-sized pan and add a scoop of coconut oil to coat the pan thoroughly.
- Once the pan has heated up, add the chicken and continue to fry on hot heat. You want to ensure you cook each chicken side for 7-8 minutes.
- Remove the heat and allow to cool.
- Cut chicken into strips.
Salad
- Chop all your salad ingredients and assemble them into a salad bowl.
- Place the cooked chicken strips into the salad evenly.
- Pour the dressing, and enjoy!

Notice what makes you happy (and do more of that!)
We're not talking about chilling out on a beach sipping cocktails here (although that is quite nice). We're talking about the little things day to day that make you happy. Romanticising life is about taking those moments, acknowledging them and fitting more of them into your life.
